Burčák is a beverage produced from freshly pressed grape must through the process of fermentation. It is rich in vitamins, particularly vitamin B and C, and minerals (primarily potassium). At the same time, it is also a source of antioxidants, which help protect the body from harmful free radicals. However, it contains a high amount of sugar and alcohol, the level of which gradually increases during fermentation. Burčák should be consumed in moderation because the presence of live microbial cultures can negatively affect intestinal peristalsis.

What is your opinion on "burčák"? Is it really as healthy as it is often claimed to be? And how much do its effects on the body change with respect to the duration of fermentation?

As the fermentation period extends, the alcohol content increases and the nutritional composition changes (primarily, the amount of sugars decreases). The greatest benefit of "burčák" is the content of yeast producing B complex vitamins, so consuming this beverage in moderate amounts has a positive impact on the intestinal microbiome. In excessive amounts, however, it results in exactly the opposite effects :-)

Mgr. Martin Jelínek has been systematically involved in nutrition education since 1999. He is the founder of ATAC, the educational company behind NutriCourses, and the author of an educational system focused on nutrition, healthy lifestyle, and the practical application of nutrition knowledge.

He graduated from the Faculty of Science at Masaryk University in Brno. Throughout his professional career, he has combined nutrition, education, and the practical application of acquired knowledge.
