Miso paste

Miso paste is a traditional Japanese food made by fermenting soybeans, salt, and seasoning, often with the addition of rice or barley. It is characterized by a strong, salty flavor and creamy consistency. Miso paste is an excellent source of protein and fiber and is rich in vitamins. It also contains probiotics that support gut health and the immune system. It is also a source of salt, which in larger amounts contributes to high blood pressure.

Could you advise me on what to substitute for miso paste, which contains fermented soy, if someone is allergic to soy?

In the case of a soy allergy, it is absolutely necessary to avoid any sources of soy, which means miso pastes must be excluded from the diet. As a substitute, use any other salty seasoning (salt, broths...) - the nutritional and characteristic properties of these alternatives will naturally be different (i.e., not as "perfect"), but for health reasons, there is no other option for those with allergies.
