Microorganisms

Microorganisms are small unicellular organisms. They include bacteria, viruses, fungi, protozoa, and some types of algae and molds. In the context of health and nutrition, they play a key role - some can cause diseases, while others are essential for health. Certain bacteria in the intestines help digest food, produce vitamins, and protect against harmful microbes. In the field of nutrition, microorganisms are crucial for fermentation processes, which are used in the production of yogurts, cheeses, beer, wine, baked goods, and other foods.

Hello,
I am interested in the mention of vitamin B12 in the introduction to Digestion Anatomy, where it is mentioned that microorganisms in the large intestine produce certain vitamins (B12 and K). Does this occur in a location where we no longer absorb B12? Is this why supplementation is necessary in the case of veganism? Thank you.

The gut microbiota can indeed produce B12 analogues, but the problem lies with their bioavailability and the site of production. For B12 to be absorbed, it must be bound to the intrinsic factor (a glycoprotein produced in the stomach), which allows B12 to be absorbed through the mucosa of the small intestine. For these reasons, there is a need for supportive supplementation in individuals who avoid consuming animal food sources.

Lecturer and author of the educational system

Mgr. Martin Jelínek has been systematically involved in nutrition education since 1999. He is the founder of ATAC, the educational company behind NutriCourses, and the author of an educational system focused on nutrition, healthy lifestyle, and the practical application of nutrition knowledge.

He graduated from the Faculty of Science at Masaryk University in Brno. Throughout his professional career, he has combined nutrition, education, and the practical application of acquired knowledge. His educational system also includes the ZOF (Zone of Optimal Functioning) learning application, where students turn theory into practical work with meal plans.

In 2007, he launched the first intake of a six-month course focused on the education of nutrition advisors. Over time, this course became the foundation for the further development of the educational system and a range of specialised courses.
