These recommendations are generally valid and are the standard in modern nutrition. If you evaluate regular meat consumption in terms of digestive demands, it is clear that it is not an ideal model. However, during the transition to solid foods, it is absolutely necessary to ensure an adequate supply of key nutrients in the most biologically available form and in a "safe" form (foods should not present risks related to food intolerances and allergies and should be digestible by a toddler's digestive tract without significant issues). These requirements are therefore much more important than the factor of digestibility.
The fact is that the term "meat" encompasses not only a relatively small share of meat from warm-blooded animals but also the possibility of using meat and bone broths, which are much easier to digest (provided they contain enough protein).
Applying vegetarianism at this stage of a child's development is highly nutritionally and health-risky, so please be cautious with any such experiments. If you reduce the portion of meat or its frequency, you may fail to provide the necessary amount of nutrients for the child. On the other hand, keep in mind that this is a dietary model and not one that must be blindly followed (it would also be difficult to find a nutritionally optimal alternative).
