The difference between them in relation to sodium content is not particularly significant. From a nutritional standpoint, the key role is played by the amount of other minerals (most commonly = in the greatest concentration, it is iron, followed by manganese, and in fortified products, a higher presence of iodine and fluoride). From this perspective, salt is a crucial source of sodium, and for these reasons, it is necessary to regulate its amount in daily diet. At first glance, salts containing, for example, iron (typically lava salt, which is a significant source of it) might seem more advantageous, but the "issue" with these is that the iron is of inorganic origin (thus not very biologically available). For the past few decades, iodized salt has been the standard in our inland conditions due to the need to increase the intake of deficient iodine for thyroid function. The added iodine practically has no effect on the sodium content, since sodium is a macro-element while iodine is measured in micrograms.

Mgr. Martin Jelínek has been systematically involved in nutrition education since 1999. He is the founder of ATAC, the educational company behind NutriCourses, and the author of an educational system focused on nutrition, healthy lifestyle, and the practical application of nutrition knowledge.
He graduated from the Faculty of Science at Masaryk University in Brno. Throughout his professional career, he has combined nutrition, education, and the practical application of acquired knowledge. His educational system also includes the ZOF (Zone of Optimal Functioning) learning application, where students turn theory into practical work with meal plans.
In 2007, he launched the first intake of a six-month course focused on the education of nutrition advisors. Over time, this course became the foundation for the further development of the educational system and a range of specialised courses.
