Hello,
I would like to ask if, for example, in plant-based diets, gelatin can be easily replaced with agar-agar or alginates (meaning whether they will have the same effect) and also how much they differ from a nutritional perspective?

These plant-based alternatives function in the kitchen as a fairly meaningful substitute. However, the general rule applies that each food (or its component) is unique, and there are no two with completely identical properties, meaning that alginates have slightly different characteristics compared to animal gelatin. Nutritionally, they are on a completely different level since gelatin is a mixture of proteins, whereas the plant-based versions are composed of polysaccharides.
