Hello,

New and different types of bread are constantly appearing in stores. I would like to ask if there is a difference between sourdough bread, leavened bread, or bread with a sourdough starter. I mean in terms of processing technology or are these just language expressions by sales chains, and are they actually one and the same process of fermentation and baking?

Sourdough and ferment are synonyms, so there is no difference here. If you encounter the term "bread with sourdough" in baked goods, it is important to thoroughly examine the ingredients – it might be purely sourdough bread, or it could be bread that contains only a certain proportion of sourdough along with the presence of yeast (this information must be provided by the food manufacturer on the packaging by law, or in the case of unpackaged foods, must be available to the customer upon request).

Mgr. Martin Jelínek has been systematically involved in nutrition education since 1999. He is the founder of ATAC, the educational company behind NutriCourses, and the author of an educational system focused on nutrition, healthy lifestyle, and the practical application of nutrition knowledge.

He graduated from the Faculty of Science at Masaryk University in Brno. Throughout his professional career, he has combined nutrition, education, and the practical application of acquired knowledge. His educational system also includes the ZOF (Zone of Optimal Functioning) learning application, where students turn theory into practical work with meal plans.
