Hello,
In the quiz, it is stated that "Sourdough bread is more yang compared to whole grain," but it was also previously mentioned that grinding grain adds more yin. Do I understand correctly that the method of preparation (baking) has a stronger final influence on the entire food, and therefore, as a result, it is more yang?

The reason lies in the salt content; bread contains an average of 1.5-2% salt. This means, for example, that 2 slices of bread (approximately 100 g) contain 1.5-2 g of salt, which is essentially 30% of the recommended daily intake. Salt, as the strongest yang factor in the diet, shifts the balance in this direction.

Mgr. Martin Jelínek has been systematically involved in nutrition education since 1999. He is the founder of ATAC, the educational company behind NutriCourses, and the author of an educational system focused on nutrition, healthy lifestyle, and the practical application of nutrition knowledge.

He graduated from the Faculty of Science at Masaryk University in Brno. Throughout his professional career, he has combined nutrition, education, and the practical application of acquired knowledge.
