Nutri Courses

Advisory

Hello,

Do I understand correctly that it is only phytic acid in nuts and seeds that binds minerals and thus reduces their bioavailability? Or do enzyme inhibitors also perform this binding?

Enzyme inhibitors work by blocking the activity of enzymes. The most significant in relation to antinutritional substances are trypsin inhibitors, whose task is to break down proteins. A secondary manifestation is the body's inability to utilize minerals bound to proteins. The highest concentration of trypsin inhibitors is found in soybeans.
