In this case, what is meant is the so-called Maillard reaction - it is a chemical reaction between certain carbohydrates and amino acids, which occurs at temperatures above 120°C. During this reaction, acrylamide is formed, which is a substance with potentially carcinogenic effects. Therefore, it is advisable to avoid using excessively high temperatures (baking, frying, deep-frying) when preparing dishes.
