As a chef with twelve years of experience, I am unable to identify an astringent taste. Could you please briefly tell me which foods have an astringent taste?

Astringent (tart) taste in foods is caused by polyphenols, which are found in certain types of fruit (mostly unripe, but not exclusively) and can also be experienced in wine (which contains a higher proportion of tannins). When you eat chokeberries, an unripe banana, or sip red wine (or, in a better scenario, chew grape seeds), you will experience the typically tart (astringent) taste in your mouth.
