I am currently encountering a trend in my surroundings where people store eggs (home-produced) at room temperature. I never paid attention to this in other countries, but people are telling me that we are one of the few countries that store eggs in cold conditions. So, what is the situation?

This is simple - storing food in warm conditions shortens its shelf life. Therefore, modern food science strives to define the optimal conditions for each category of food to ensure the longest freshness. This also applies to eggs, where the ideal storage temperature is considered to be between 2 and 8°C, or in a place where the temperature does not fluctuate and does not exceed 18°C.

We still encounter traditions that persist from times when modern refrigeration technologies did not exist - there's nothing wrong with that, and with eggs, we should not perceive it as contradictory information. Generally, eggs do not like temperature fluctuations, and storing them at the aforementioned 18°C is essentially also fine.

Mgr. Martin Jelínek has been systematically involved in nutrition education since 1999. He is the founder of ATAC, the educational company behind NutriCourses, and the author of an educational system focused on nutrition, healthy lifestyle, and the practical application of nutrition knowledge.

He graduated from the Faculty of Science at Masaryk University in Brno. Throughout his professional career, he has combined nutrition, education, and the practical application of acquired knowledge. His educational system also includes the ZOF (Zone of Optimal Functioning) learning application, where students turn theory into practical work with meal plans.

In 2007, he launched the first intake of a six-month course focused on the education of nutrition advisors. Over time, this course became the foundation for the further development of the educational system and a range of specialised courses.
